Colorado Health Department Approves 1515 for Sous Vide Making it the
Only Certified Restaurant in Denver
As the weather turns colder and food needs to get warmer, 1515
Restaurant is reinventing soothing, “comfort food” with a number of
incredible sous vide creations including the critically acclaimed
Monkfish, Buffalo Steak and fall-of-the-bone Colorado Lamb. French for
“under vacuum”, sous vide has been a popular form of cooking in Europe
since the mid 1970s and is now emerging as one of the hottest cooking
methods in some of the nation's top restaurants.
Sous vide is a specialized method of cooking food in vacuum sealed
pouches at precisely controlled, low temperatures for long periods of
time. Vacuum sealing the food prevents flavor and moisture from
evaporating while its cooked and since the food has not been diluted in
any way, the final product is amazingly delicate and tender with
exceptional taste. In addition, sous vide is one of the healthiest forms
of cooking because fish, meat and vegetables can be cooked without any
fat.
Famous for its award-winning, nationally recognized New American
cuisine, 1515 is the only restaurant in the Denver area to legally
practice sous vide cooking. In order to obtain sous vide certification,
1515’s chefs underwent a number of required approvals by the
Denver Department of Environmental Health.
1515 Restaurant offers affordable fine dining and exceptional service,
the freshest local meats and seafood, and organic ingredients from its
rooftop greenhouse, all in a serene, unforgettable dining experience
above Market Street.
Located at 1515 Market in downtown Denver, it is open for lunch
Wednesday - Friday 11am to 2pm and for dinner Monday - Saturday 5pm to
10pm. Two private rooms are available for groups (up to 150 guests);
parking is free in the underground garage at 16 Market Square (dinner

Live music from Denver homegrown talent (even, previously, The Fray) is
featured downstairs, at 1515 Bar, Fridays/ Saturdays from 10pm-close in
a relaxing atmosphere. An independently-owned fine dining establishment
in an historic landmark in Lodo (constructed in 1860, listed in
Colorado’s historic register), 1515 offers a rare setting to dine and
